Coconut Blueberry Lime Lollies

Delicious, homemade ice lollies with just 4 natural ingredients: creamy coconut milk, honey or maple syrup, fresh or frozen blueberries and lime zest.

Soft silicone moulds are best as the frozen lollies are easier to remove than from hard plastic or metal ones.

Ingredients

  • 400 ml tinned coconut milk
  • 2 - 4 tbsp liquid sweetener e.g. maple syrup, honey
  • 200 g blueberries fresh or frozen
  • 2 limes (zest only) finely grated

Instructions

  1. Using a blender, whizz together the coconut milk and sweetener until smooth. How much sweetener you need will depend on the ripeness/sweetness of the blueberries and your own taste. Start with 2 tablespoons, taste and add more if needed.

  2. Add the blueberries and whizz again: either whizz until completely smooth or leave some larger pieces remaining.

  3. Stir in the lime zest.

  4. Pour into 6 - 8 ice lolly moulds, push in the sticks, and freeze until set (approximately 5 hours or leave overnight).

    Loosen the lollies by briefly holding the mould under a warm tap.
