Carrot Cake Overnight Oats

If you’re a porridge fan like me, then you’re going to love overnight oats. In this post I show you how to make Carrot Cake Overnight Oats –  a nutritious, easy breakfast with all the flavour of a spicy carrot cake. Great for when you know you’ll need a quick breakfast in the morning, or for a grab and go breakfast to take to work.

CARROT CAKE & ME

I’ve always loved carrot cake. I think it must be the lure of a sweet, spicy treat given a veneer of healthiness due to the inclusion of vegetable matter.

So much do I love carrot cake that, eager to make something that could be ready to scoff in a fraction of the time it takes to make a cake, I developed my Carrot Cake Oat Bars.

Now I want to share with you a fabulous oaty breakfast based on the flavours of carrot cake: Carrot Cake Overnight Oats.

OVERNIGHT OATS

If you don’t know already, overnight oats are really just a form of uncooked porridge. Wait. Don’t go wrinkling up your nose thinking, ‘yuk, cold porridge!’ Overnight oats really are nothing like stodgy old unwanted porridge.

Overnight oats are deliciously creamy and a fantastic option if you know you’re going to be pushed for time in the morning. I think they’re particularly good if you’re not up to breakfast first thing, but perhaps need to eat once you get to work or wherever you’ve got to be. When I worked in an office, I’d regularly take a pot with me, prepped the night before.

CARROT CAKE OVERNIGHT OATS

The base of my Carrot Cake Overnight Oats is the same as for my Coconut Porridge. That is: rolled oats, desiccated coconut, coconut milk diluted with water and sweetened with a little honey and flavoured with vanilla.

If you think overnight oats are going to be a bit sloppy and texture-less, don’t worry. The raw carrot, coconut, seeds, nuts and sultanas provide plenty of crunch and chew to make this a really satisfying breakfast. Generous amounts of mixed spice and cinnamon mean you can’t mistake the carrot cake influence.

Because overnight oats and porridge have the same base ingredients, if you’re really in the mood for porridge (or have forgotten to mix up your overnight oats the evening before), you could use the same mixture to make Carrot Cake Porridge. Simply follow my instructions for Coconut Porridge, substituting the ingredients shown in this post.

Carrot Cake Overnight Oats

Carrot Cake Overnight Oats are a nutritious, easy breakfast with all the flavour of spicy carrot cake. Just mix the ingredients the night before & leave in the fridge for an instant breakfast. Great for a grab & go breakfast if you can't face eating first thing.

Ingredients

  • 45 g rolled oats
  • 1 tbsp desiccated coconut
  • 1 tbsp chia seeds optional
  • 100 ml coconut milk
  • 100 ml water
  • 1 tsp honey or other sweetener to taste optional
  • 1 tsp vanilla extract optional
  • 1 medium carrot julienned or grated
  • 1 tbsp sultanas
  • 0.5 tsp mixed spice
  • 0.5 tsp cinnamon

To serve

  • 1 tbsp chopped nuts e.g. hazelnuts, walnuts
  • 0.5 tbsp pumpkin seeds
  • 0.5 tbsp sunflower seeds
  • 1 tbsp coconut shavings

Instructions

  1. In a bowl, jar or other container, whisk together all the ingredients except those 'To serve'.

    Cover and leave in the fridge overnight.

  2. In the morning, top with the chopped nuts, seeds and coconut before serving.
