Here in the UK, summer has barely started. But we’ve had some scorching weather already. Which means I want plenty of frozen sweet (but not too sweet) treats stashed away in the freezer. But you can forget shop bought ice lollies with their stabilizers, thickeners, artificial flavours and whatnot. Because you only need a handful of natural ingredients, plus little more than 5 minutes, to make delicious, rich, fruity lollies at home.
COCONUT BLUBERRY LIME LOLLIES
Blueberry and lime is one of my favourite taste combinations. Add to that one of my other fave flavours, coconut, and it was only a matter of time before I came up with Coconut Blueberry Lime Lollies.
All you need are four ingredients: creamy tinned coconut milk, a liquid sweetener such as honey or maple syrup, fresh or frozen blueberries, and zingy lime zest. You’ll also need some lolly moulds with sticks. I highly recommend you get silicone ones: it’s much easier to remove the frozen lollies compared to hard plastic or metal ones.
How many lollies you get from my recipe will obviously depend on the size of your moulds. But, as a rough guide, you should get a minimum of 6 and up to eight medium sized lollies.
As the mixture isn’t churned, don’t expect an ice cream-like texture from these lollies. What you will get though is a cooling, tasty treat!
WHIZZ, FREEZE & ENJOY
Making the Coconut Blueberry Lime Lollies really couldn’t be simpler. Using a blender, start by whizzing together the coconut milk and sweetener until smooth. People’s idea of what is sweet or too sweet will naturally vary. I find that 2 tablespoons of honey or maple syrup is usually about right. But others may differ. You should also consider the sweetness of your berries. My frozen ones were quite tart, while ripe, fresh fruit will bring more natural sweetness. Have a taste and add up to another 2 tablespoons of sweetener if you like.
The fruit goes in next. It’s up to you whether you whizz until the blueberries are completely pureed into the coconut or leave some of them chunkier. I prefer to have a few bigger pieces for an extra fruity pop. Finally, I stir in the finely grated and chopped zest of 2 limes. You can whizz these in, but I prefer to see some little strands.
All that’s left to do then is pour into your lolly moulds, push in the sticks, and freeze. About 5 hours should do it. But I normally just leave overnight.
To get a lolly out of the mould, briefly hold under a warm (not hot!) tap, then wiggle the stick while pulling the silicone away from the lolly. It should now lift out pretty easily.
And that’s it. Rich, fruity, tangy, and delicious homemade ice lollies. With next to no effort and all natural ingredients.

Coconut Blueberry Lime Lollies
Delicious, homemade ice lollies with just 4 natural ingredients: creamy coconut milk, honey or maple syrup, fresh or frozen blueberries and lime zest.
Soft silicone moulds are best as the frozen lollies are easier to remove than from hard plastic or metal ones.
Ingredients
- 400 ml tinned coconut milk
- 2 - 4 tbsp liquid sweetener e.g. maple syrup, honey
- 200 g blueberries fresh or frozen
- 2 limes (zest only) finely grated
Instructions

Using a blender, whizz together the coconut milk and sweetener until smooth. How much sweetener you need will depend on the ripeness/sweetness of the blueberries and your own taste. Start with 2 tablespoons, taste and add more if needed.

Add the blueberries and whizz again: either whizz until completely smooth or leave some larger pieces remaining.

Stir in the lime zest.

Pour into 6 - 8 ice lolly moulds, push in the sticks, and freeze until set (approximately 5 hours or leave overnight).
Loosen the lollies by briefly holding the mould under a warm tap.
