Cucumber, Apple & Mint Smoothie is a wonderfully refreshing drink on a hot day.

Cooling cucumber and naturally sweet apple are a perfect combination with the tang of fresh mint and zingy lime juice.

Blend in some ice cubes, plus a little sweetener if you like, for a light, great-tasting thirst quencher.

If you fancy a fresh alcoholic cocktail, add a measure or two of white rum per person.

As I write, Britain is enjoying a hot and sunny Bank Holiday weekend.

Mind you, although it’s the first of June tomorrow, recently it’s been decidedly dull and rainy. But now I can finally share my Cucumber, Apple & Mint Smoothie which I actually created back in April.

With such inexpensive, everyday staples like cucumber and apple, I think you may be surprised at just how good this smoothie is!

There are no special, hidden ingredients. Just cucumber, apples, fresh mint leaves and lime juice.

Blended with some ice cubes, and a little sweetener if you like, this drink is light, refreshing and, to my taste, utterly delicious.

 

CUCUMBER, APPLE & MINT SMOOTHIE

For this invigorating smoothie, you simply whizz all the ingredients together in a blender. But then you probably already guessed that didn’t you? That’s one of the many beauties of smoothies: dead easy!

I prefer to peel the cucumber and remove the seeds as these can be bitter. However, you can include them if you like the taste.

You can use any type of apple: tart or sweet, red, green or any other colour.

As the skin of the apple is left on, be aware that your choice will affect the colour of the drink.

Look closely at the photos of the finished smoothies and you’ll see red flecks where I used apples with redder skins, while another batch is a more uniform green.

But I think the ingredients that really lift this smoothie are mint leaves and lime juice.

For me, their tang, zip and zing add a wonderful freshness that just feels energizing. And tastes pretty good too, of course!

To balance things, I like to add a little sweetness. I’m currently using up last year’s homemade Dandelion Syrup. But you could try honey, maple syrup or your own favourite sweetener. If preferred, leave out the sweetener all together.

Add to the blender a handful of ice cubes per glass and you’re good to go.

After whizzing for a few seconds, I have a taste to check whether the mix needs more lime or sweetness. Then, after any necessary tweaking, I whizz again until everything is completely smooth.

SERVING

You’ll want to serve the Cucumber, Apple & Mint Smoothie right away, while it’s thick, cold and fresh.

The recipe makes either 2 small or 1 large serving. Top each glass with a slice of cucumber and a sprig of mint.

Push in a straw if you like, sit in the sun, put your feet up, and enjoy this cooling thirst-quencher.

To turn Cucumber, Apple & Mint Smoothie into a tempting alcoholic cocktail, whizz in 25-50 ml of white rum per person.

Ingredients

  • 1 medium cucumber approx 300g
  • 2 medium apples
  • 2 handfuls fresh mint leaves only
  • 1-2 limes juice only
  • 2 large handfuls ice cubes
  • 1-2 tsp honey, maple syrup or other sweetener optional

To serve (optional)

  • cucumber slices
  • sprigs of mint

Instructions

  1. Peel and deseed the cucumber, then roughly chop it.

  2. Cut the apples into quarters, cut out and discard the cores, then roughly chop.

  3. Put into a blender the cucumber, apple, mint leaves, the juice of ONE lime, the ice cubes, and 2 tsp of sweetener if using.

    Blend for a few seconds then taste. Add more lime juice and/or sweetener if liked the blend again until completely smooth.

  4. Divide between two glasses, garnished with mint slices and sprigs of mint if liked, and serve.
